Slicing Tips

  1. 1. Fill a tall container with hot tap water. Make sure the container is deep enough to cover the entire blade of your knife. Dip the knife into the hot water and wipe it clean with a towel before making your cut. Cheesecakes may be cut with cheese wire or dental floss; these cutting tools work very well.
  2. 2. Depending on the size of the cake you may choose to cut it into 12 to 16 slices.  If cutting the cake into 12 slices begin by cutting the cake into quarters, and then cut each quarter into thirds.  Pull the knife through the cake and out the side for a smooth cut.  Do not lift the knife through the top.
  3. 3. In order to achieve 16 slices, cut the cake into quarters, cut each quarter in half and each half in half.  If your knife is not long enough to reach across the cake, start from the center and work outwards.
  4. 4. The first slice of cake is the hardest to remove.  Slide the knife or spatula along the bottom of the cake between the crust and the pan before lifting the first slice upward, outward and onto a plate.
  5. 5. When serving plain cheesecake, you may want to garnish the slices individually.  There are many ways to achieve this.  Chocolate sauce berries and preserves.
