Tamale Pie

  • 1 c Onion,Chopped
  • 1 c Green Pepper,Chopped
  • 1 T Cooking Oil
  • 3/4 lb Ground Beef
  • 1 cn Tomatoes,Chopped
  • 1 cn Whole Kernel Corn,Can Substitute Mexi-Corn
  • 1/2 c Black Olives,Chopped
  • 1 Garlic Clove,Minced
  • 1 T Nevella ® Granular No Calorie Sweetener
  • 1 t Salt
  • 1 t Chili Powder
  • 1/8 t Pepper
  • 2 oz American Cheese,Sharp, -Grated
  • 1 1/2 c Corn Meal,Yellow, For Topping Mixture
  • 1 t Salt,For Topping Mixture
  • 4 c Water,Cold, For Topping Mixture
  • 1 t Nevella ® Granular No Calorie Sweetener,For Topping Mixture

Pie:
  1. Preheat oven to 375°/F.
  2. Sauté onions, green pepper in cooking oil until soft.
  3. Add Meat, cooking until brown.
  4. Add tomatoes, corn, garlic and seasonings, and simmer for about 30 minutes.
  5. Add Cheese and mix well, then pour into greased 2 Quart casserole dish.

Corn Meal Topping:
  1. Combine yellow corn meal, salt with cold water in large saucepan.
  2. Cook over low-medium heat and stir until thickened.
  3. Pour corn meal topping over pie, and bake at 375°/F for 35 - 45 minutes or until lightly brown.
  4. Top with Black Olives and Serve.
