Pineapple Cheese Salad

1 lg Pineapple,Cut Into Small Chunks

1 c Pecans,Coarsely Chopped

1 oz Longhorn Cheese,1/2 Inch Cubes

1 Egg
-
2 T Flour,Lightly Rounded

1/2 c Nevella ® Granular No-Calorie Sweetener

1/8 t Salt

Drain pineapple juice into a small dish, and set aside.

Layer small chunks of pineapple, chopped nuts, and cheese cubes in a
glass dish. Do not stir.

In a separate bowl, beat egg, sugar, salt and flour, until well blended.

Combine flour mixture, then pineapple juice in a medium saucepan.

Over medium heat, cook slowly, stirring constantly until thickens.

Pour hot mixture over top of cheese cubes, mix gently.

Let cool, and serve.
