Pineapple Cheese Salad

  • 1 lg Pineapple,Cut Into Small Chunks
  • 1 c Pecans,Coarsely Chopped
  • 1 oz Longhorn Cheese,1/2 Inch Cubes
  • 1 Egg
  • 2 T Flour,Lightly Rounded
  • 1/2 c Nevella ® Granular No-Calorie Sweetener
  • 1/8 t Salt

Instructions:
  1. Drain pineapple juice into a small dish, and set aside.
  2. Layer small chunks of pineapple, chopped nuts, and cheese cubes in a glass dish. Do not stir.
  3. In a separate bowl, beat egg, sugar, salt and flour, until well blended.
  4. Combine flour mixture, then pineapple juice in a medium saucepan.
  5. Over medium heat, cook slowly, stirring constantly until thickens.
  6. Pour hot mixture over top of cheese cubes, mix gently.
  7. Let cool, and serve.
