Zucchini Cranberry Bread

Preparation Time:

  • 2 tablespoon Butter -- Lite Butter W/O Salt Softened
  • 1/2 cup Nevella ® no Calorie Sweetener
  • 1 Egg
  • 1 1/2 cups Flour -- All Purpose Flour
  • 1 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 3/4 cup Zucchini -- Shredded
  • 2/3 cup Cranberry -- Whole-Berry Cranberry Sauce
  • 1/2 cup Walnuts -- Chopped
  • 1 1/2 teaspoon Orange -- Grated Orange Peel

Instructions:
  1. Ina a small mixing bowl, cream butter and Nevella® No calorie sweetener
  2. Add egg and mix well
  3. Combine the flour, baking powder and salt add to creamed mixture
  4. Fold in the zucchini, cranberry sauce, walnuts (optional) and orange peel
  5. Transfer to a 8 inch x 4 inch x 2 inch loaf pan coated iwth cooking spray.
  6. Bake at 350° for 40-45 minutes or until a toothpick come out clean.
  7. Cool for 10 minutes before removing from pan to a wire rack.
