Swirl Cookies (Low Calorie)

Preparation Time:

  • 1/2 cup Butter -- Lite Unsalted
  • 2 tablespoon Nevella® Granular No Calorie Sweetener
  • 2 teaspoon Vanilla
  • 2 ea Egg
  • 1 1/2 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 cup 2% Milk -- Warmed To Room Temperature
  • 1 teaspoon Cocoa -- Unsweetened
  • 1/8 teaspoon Chocolate Extract
  • Cooking Spray -- Butter Flavored Refrigerated

Instructions:
  1. Preheat oven to 375 degrees F.
  2. Cream butter, Nevella® no calorie sweetener, vanilla, and eggs.
  3. Combine Flour, baking powder and add to creamed ingredients.
  4. Add 3 tablespoons of milk and stir to thoroughly mix and dough comes together.
  5. Divide dough into 2 parts.
  6. Add cocoa and chocolate extract to one part and stir until well blended.
  7. Chill both halves for at least 1 hour.
  8. Working on a floured surface, roll out each part to a rectangle about 3-inches wide.
  9. Place chocolate part on top of the white part, press together tightly with a rolling pin.
  10. Brush the chocolate dough with remaining milk.
  11. Roll up like a jelly roll to make a log about 1- 1/2-inches in diameter.
  12. Wrap in waxed paper and chill until firm, about 2 hours.
  13. Slice cookies 1/8-inch thick. Place on a nonstick cookie sheet that has been lightly coated with cooking spray.
  14. Bake for 8 minutes or until lightly browned. Transfer to a wire rack to cool.
