Sweet N' Sour Carrots (Low Calorie, Low Fat)

  • 2 cups Baby Carrots -- Sliced
  • 1/2 cup Celery -- Sliced Thinly
  • 8 ounce Pineapple -- Tidbits Drained (reserve Juice)
  • 1 tablespoon Vinegar -- White Distilled
  • 2 teaspoon Cornstarch
  • 1 teaspoon Soy Sauce -- Lite
  • 2 tablespoon Butter -- Lite No Salt
  • 1/4 cup Green Onion -- Sliced
  • 1/4 cup Nevella® Granular No Calorie Sweetener

Instructions:
  1. Cook carrots and celery in a medium saucepan with a small amount of water until tender. Drain and set aside.
  2. Add enough water to the reserved pineapple juice to make 1/2 cup of liquid. Stir in vinegar, cornstarch, and soy sauce. Cook in a medium saucepan until liquid thickens, stirring frequently.
  3. Add butter, drained pineapple and onions. Cook until all ingredient are heated.
  4. Add drained carrots and celery, and Nevella® no calorie sweetener.
