Sugar Cookie (Reduced Calorie)

Preparation Time:

  • 2 1/2 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 sticks Butter -- Lite Unsalted
  • 3/4 cup Nevella® Granular No Calorie Sweetener
  • 3/4 cup Powdered Sugar -- Sifted
  • 2 ea Egg Yolk
  • 1 teaspoon Vanilla
  • 1/2 cup Nevella® Granular No Calorie Sweetener -

Instructions:
  1. Preheat oven to 375 degrees F.
  2. Whisk the flour, baking powder and salt in a medium bowl.
  3. Beat the butter and both Nevella® no calorie sweetener and powdered sugar in separate medium bowl using an electric mixer on medium-high speed. Beat until light and fluffy, approximately 30 seconds.
  4. Add the egg yolks, vanilla and mix until fully incorporated.
  5. Slowly add the flour mixture, and continue beating until the dough comes together, stopping and scraping down the sides of the bowl as needed.
  6. Roll about a tablespoon of dough by hand into a ball and place them on an un-greased baking sheet, leaving about 1-inch between cookies.
  7. Refrigerate cookies at least 30 minutes before baking.
  8. Bake the cookies until the bottoms are golden brown, approximately 10 - 15 minutes.
  9. Remove cookies from the oven and sprinkle with Nevella® no calorie sweetener while warm.
  10. Cool on sheets until firm enough to transfer to a rack to cool.
