Poppy Seed Lemon Scones

Preparation Time:

  • 2 Eggs
  • 1 cup Nevella ® no Calorie Sweetener
  • 6 tablespoon Butter
  • 1/4 cup Lemon Juice
  • 2 tablespoon Lemon Peel
  • 2 cups Flour
  • 1/4 cup Nevella ® no Calorie Sweetener
  • 1 tablespoon Baking Powder
  • 1 tablespoon Poppy Seeds
  • 1/4 teaspoon Salt
  • 1/3 cup Butter
  • 3/4 cup Milk
  • 2 tablespoon Lemon Juice

Instructions:
  1. In a double broiler, beat eggs and Nevella® No Calorie Sweetener
  2. Stir in butter, lemon juice and lemon peel
  3. Cook and stir over simmering water for 15 minutes or until mixture reaches 160° and is thickened
  4. Cover and refrigerate until chilled
  5. For Scones combine the flour, Nevella®No Calorie Sweetener, baking powder, poppy seeds, and salt
  6. Cut in butter until mixture resembles fine crumbs
  7. Combine Milk and lemon juice stir into crumb mixture just until blended(dough will be soft)
  8. Turn onto a floured surface; knead gently six times
  9. Shape into balls. Pat dough into an 8 in circle
  10. Using a sharp knife cut into 8 wedges. Separate wedges and transfer to a greased baking sheet.
  11. Sprinkle with additional Nevella® No Calorie Sweetener
  12. Bake @ 425° for 12/15 minutes or until lightly browned
  13. Serve with the lemon curd
