Peach Cake (Reduced Calorie)

1 cup Flour

3/4 cup Nevella® Granular No Calorie Sweetener

1/2 tablespoon Baking Powder

1/4 teaspoon Salt

3 tablespoon Canola Oil

1 ea Egg -- Separated

1/4 cup Egg Substitute
-
1/4 cup Water
-
3/4 teaspoon Vanilla
-
Grated Zest Of 1/2 Large Orange
-
1/2 cup Egg White -- Room Temperature
-
1/4 teaspoon Cream Of Tartar
-
1 1/2 cups Whipped Topping -- Fat Free

1 pound Peaches -- Fresh Peeled And Sliced Thin

Preheat oven to 325 degrees F.

Prepare a 9-inch baking dish with cooking spray.

Place flour, Nevella® no calorie sweetener, baking powder and salt in a mixing bowl. Mix well.

In a separate bowl blend together oil, egg yolk, egg substitute, water, vanilla, and orange zest.

Pour wet ingredients into dry ingredients and blend well.

In separate bowl beat the egg whites and cream of tartar to stiff peaks.

Fold egg whites into batter gently.

Place in prepared baking dish and bake 35 - 40 minutes or until golden brown.

Turn cake out on rack.

Using a serrated knife, slice the cake in half.

Cover with 3/4 of the whipped topping.

Arrange peach slices on top of whipped topping. (reserve some peaches for decoration)

Refrigerate until ready to serve. Slice and serve topped with remaining whipped topping and peach slices.
