Cheesecake Cups

Preparation Time:

  • 24 ounce Cream Cheese -- Low Fat
  • 1 cup Nevella® Granular No Calorie Sweetener
  • 5 ea Egg
  • 1 teaspoon Vanilla
  • 8 ounce Sour Cream -- Reduced Fat
  • 1 cup Nevella® Granular No Calorie Sweetener
  • 1 teaspoon Vanilla

Filling:
  1. Preheat oven to 350 degrees F.
  2. Line cupcake tins with paper liners.
  3. In a medium mixing bowl cream together the cream cheese and 1 cup Nevella® no calorie sweetener.
  4. Stir in eggs one at a time to ensure incorporated.
  5. Add 1 teaspoon vanilla and mix well.
  6. Spoon mixture into cupcake liners until 2/3 filled.
  7. Bake for 30 minutes or until golden brown, remove and cool for 10 minutes.

Topping:
  1. Whisk together sour cream, 1 cup Nevella® no calorie sweetener and remaining vanilla.
  2. Spoon on top of each cupcake.
  3. Return to the oven and bake for 7 to 10 minutes or until set.
  4. Cool completely before removing from pans.
