Blueberry Oatmeal Muffins

Preparation Time:

  • 1 1/4 cups Flour -- All Purpose Flour
  • 1 cup Oatmeal -- Quick Cooking Oats
  • 1/2 cup Nevella ® no Calorie Sweetener
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 2 Egg White
  • 1/2 cup Water
  • 1/3 cup Vegetable Oil
  • 1 cup Blueberries -- Use Fresh Or Frozen
  • 2 tablespoon Nevella ® no Calorie Sweetener
  • 1/4 teaspoon Cinnamon

Instructions:
  1. In a bowl combine flour, oatmeal, Nevella® No Calorie Sweetener, baking powder, Baking Soda, and salt
  2. In another bowl beat egg whites, water, and oil.
  3. Stir to dry ingredients just until moistened
  4. Fold in Blueberries
  5. Fill paper-lined muffin cups 3/4 way full
  6. Combine 2 Tbls Nevella ® No Calorie Sweetener and Cinnamon and sprinkle over muffins
  7. Bake @ 400° for about 18-22 Minutes or until a toothpick comes out clean
  8. Cool for 5 minutes before removing from pan.
